Autumnal Pumpkin and Cinnamon Latte

It's that time of year when the weather turns colder, we enjoy less time each day in the sunshine, the leaves change colour, wind picks up and the rain is more consistent.. that's right, I'm talking about Autumn.

Back into the classroom to educate and grow or the place of work you call home for the majority of the day. Having enjoyed a wonderful sunny summer holiday, we now gear up for dark evenings, debating whether or not to turn the heating on or just calming the kids down as Halloween approaches.

It's a busy time of year for sure!

There are many of us that as the season changes, grab our Wellies, coats and the family pet and head outside to enjoy the wonders of the red, brown scenery before us. I know I do!

So why not enjoy the beverage we all reach for inside or out with a little bit of an Autumnal twist?

I have some fantastic memories of wondering into that large muddy field with utter amazement while gazing out at the giant orange dots spread out in front of me. Pumpkins mark fun and games for families all over the country and what we do with them is varied all year round.

Obviously we take care to carve out a scary face with the children and place a candle inside to light each night, letting others know they can knock at the door. I know that I always batch up some spicy Pumpkin soup which is then enjoyed for months after.. is that just me?

So it is the season to enjoy Pumpkin and we have a great way for you to use them this year, which you may not have thought about before;

Spiced Pumpkin Syrup Recipe

  • Take a small pumpkin and chop into 1cm chunks before roasting in the oven for 20 mins, at 200 degrees Celsius. 
  • Meanwhile, add to a wide pan, 200g of maple syrup, 200g honey, cinnamon stick and grate half a nutmeg with 400ml water.
  • Add your roasted pumpkin and bring to the boil. Reduce the heat to simmer and reduce down until thick.
  • Carefully (as very hot) remove the pumpkin, spices and lumps with a fine sieve.

Add a couple of table spoons of the syrup with your latte for a fresh Autumnal drink, go on, give it a go!
